2012 Harrold Smokin’ 4th of July BBQ Rib Cookoff Official Rules and Regulations 1. The Committee will supply the ribs to the contestants by 6:00 p.m. June 29, 2012. Each team will receive 60 pounds of ribs. The teams will need to set up their rib camp by or before 8:00 a.m. on June 30, 2012. (Rib camps may be set up prior to June 30, 2012.) 2. The ribs must be on ice or refrigerated before being cooked. Holding temperature must be 40 degrees or less. After cooking, the ribs must be maintained at a minimum temperature of 140 degrees. 3. The ribs must be done and ready to serve by 6:00 p.m. June 30, 2012. 4. Contestants must provide all needed equipment and supplies, including your own generator. Due to an insufficient power supply, we will NOT be supplying power this year. 5. Contestants will be allowed to use electric, gas, charcoal grills or other cooking devices normally used for a cook-off. No open pits or holes are permitted. Fires shall not be built on the ground. 6. It is the responsibility of the contestant to see that the team’s assigned cooking space is kept clean and policed following the contest. Grease containers must be used and maintained throughout the cook-off. Spilling of any grease or ash may result in disqualification. Any cooking space left in disarray or with loose trash may disqualify a team from future cook-offs. 7. Contestants must have fire suppression at the ready. 8. Contestants must have hand sanitizer and/or water and bleach. It is preferred that team members preparing and handling the meat wear gloves; however, it is not mandatory. 9. Glass beverage bottles are prohibited. Contestants found to be in possession of glass bottles may be disqualified. 10. By signing the entry form, you will be bound by the rules and regulations governing the rib cook-off. Causes for Disqualification · Excessive use of alcoholic beverages or public intoxication with a disturbance. · Use of illegal controlled substance. · Foul, abusive or unacceptable language or any language causing a disturbance. · Fighting and/or disorderly conduct. Prizes Prizes will be decided at a later date!! |
